Ingredients

40 minutes

  1. 1 cupfresh tuvar (Pigeon peas)
  2. 1/3 cupchopped green coriander
  3. 1/3 cupchopped green garlic
  4. 2 tspgreen chillies ginger paste
  5. Salt as per taste
  6. 1/2 tspgaram masala
  7. 1 tspcumin coriander powder
  8. 1.5 tsplemon juice
  9. 1 tspsugar
  10. 2 tspoil + 2 tsp for Moyan
  11. 1/2 tspmustard seeds
  12. 1/2 tspasafoetida
  13. 1/4 tspturmeric powder
  14. For paratha dough
  15. 1.5 cupwheat flour
  16. 1/2 tspsalt

    Wash and make dry fresh tuvar. Grind in a mixture jar. Heat oil in a kadai. Add mustard seeds.

    Add mustard seeds, asafoetida, green chillies ginger paste. Roast it for 1 minute.

    Add turmeric powder, add tuver mixture and mix it well. Add salt, mix well.

    Cover the lid and cook for 5 minutes. In between stir it well, tuver mixture is very sticky. To make paratha dough. Take wheat flour in a bowl, add salt and oil for Moyan. Water as required, knead soft dough.

    Now add cumin coriander powder, garam masala, chopped green coriander,green garlic and give a nice mix.

    Cook for 5 minutes. Then add lemon juice and sugar. Cook for 2 minutes.

    Let the tuver mixture cool. To make paratha, Heat tawa on gas. Take 1 dough, dust flour and roll small chapati. Place 2 tsp tuver mixture on chapati, cover from all side.

    Again roll it gently, shape paratha, roast both side on tawa with oil for 1 minute. Cook crispy.
