Prepare the ingredients.
Peel and steam the sweet potatoes.
Place the oats in a large mixing bowl.

Add the steamed sweet potatoes.
Mix well until a dough forms.

Prepare a 6-inch solid cake pan lined with parchment paper.
Press the tart crust dough evenly into the pan.
Pre-bake the crust in the oven for 15 minutes.
Bake at 350°F (180°C).
Let the crust cool after baking.

To make the egg custard filling:
Whisk together the eggs and milk until smooth.
Add the cornstarch and honey, and mix until well combined.
Strain the custard mixture.

Pour the custard into the tart crust.
Bake in the oven.
Bake at 350°F/390°F (180°C/200°C).
Total time: 40 minutes.
First, place the pan on the bottom rack and bake at 350°F (180°C) for 20 minutes.
Then move to the middle rack and bake at 390°F (200°C) for another 20 minutes.

When done, gently shake the tart—the custard should jiggle slightly in the center.
Let cool on a plate before serving.
