Very traditional Cantonese cake that I've only found rarely in dim sum restaurants. This is not the traditional version which requires yeast, but is simpler and still tasty.

Very traditional Cantonese cake that I've only found rarely in dim sum restaurants. This is not the traditional version which requires yeast, but is simpler and still tasty.

In a mixer, combine brown sugar, eggs, and vegetable oil. Mix on high speed for five minutes

While the mixer is working, sift together flour, baking powder, and salt.

Scrape down the mixing bowl, then add vanilla extract, custard powder, and evaporated milk. Mix on high speed for 1 minute more

Fold flour mixture into the batter gently until evenly mixed. Break up large clumps of flour, but be careful not to overwork the batter.

Allow the batter to sit for 30 minutes. The custard powder will thicken and many of the small lumps will disappear. There should be lots of air bubbles in the batter.

Set up your bamboo steamer with a parchment paper liner. After the 30 minutes is up, pour the batter in and let it settle for a few minutes while you heat up your steamer setup.

Cook time will depend on the size of your steamer. I have a 10 inch bamboo steamer and steam for 25 minutes. Smaller steamers may require more time as the batter will be thicker. Insert a toothpick to see if it comes out clean to check for doneness.
