Prepare a checklist. Keep essential items close by.

In a bowl, take flour, salt, 1 table spoon of ghee- mix everything together with your fingers,
add milk little by little and knead it, if necessary add water, stretch and fold and knead; the dough will become smooth. Brush some oil or ghee on the dough to prevent it from drying.
Rest the dougr for 15 to 30 minutes covering it with a damp cloth. Knead again and make lemon sized balls. Make 4 balls and always cover to prevent drying. - 3
Filling: Take a tbsp ghee or oil. In a saucepan. Use medium heat for roasting. Fry the cashews and powder it. Roast the grated coconut in a tbsp butter in a saucepan. Transfer the powdered cashews and roasted coconut to a bowl and cool. Add brown sugar, cardamom, saffron. Mix all these together with a pinch of salt, Transfer the misture to a dry grinder and powder the filling

Wrap:
Dust a chapati stone with flour. Flatten the ball and roll to make a thin round. Bake this in a skillet over medium heat. Apply little melted butter on the skillet. Place the rolled poli on the skillet.. Both sides should be golden brown. Don't make it too crisp. Take out and place on a plate. Soak in 2 tbsp milk for a couple of minutes. it will make it pliable and easy to roll. - 5
Now Take out and place the poli on another plate. Sprinkle liberally over ¼ cup powdered filling on the top.. Roll tightly from bottom to top. Let it rest for ½ hour to get all flavours mingle together.Then taste.

If desired, you can combine the dipping ingredients in a bowl and soak the surul poli in the coconut milk dipping.
