Grandpa’s Blueberry Muffins

Ingredients

  1. 2 cupsAP Flour
  2. 1 TablespoonBaking Powder
  3. 1 teaspoonsalt
  4. 1 cupsugar
  5. 1 teaspooncinnamon
  6. 1/4 teaspoonnutmeg
  7. 1 cupmilk
  8. 1egg
  9. 1/3 cupoil
  10. 1 teaspoonvanilla
  11. 1 cupblueberries

Cooking Instructions

    Preheat oven to 400 F. Lightly grease 8 count mini-loaf muffin pan.

    Reserving 1 tablespoon of flour, mix dry ingredients in medium mixing bowl.

    In separate bowl lightly beat egg. Add remaining wet ingredients.

    Add wet ingredients to dry and mix until just combined. Toss half cup blueberries with the reserved flour and fold into batter.

    Allow batter to sit for 5 minutes. Pour batter into muffin pan. Sprinkle remaining blueberries on top of batter in muffin pan.

    Bake in oven for 20 minutes.

    Allow muffins to cool in pan for a few minutes. Makes 8 mini-loaves.
