Lolly Cake - Marshmallow Log (Κορμός με ζαχαρωτά)!

After a while, and inspired by the #Ημερολόγιο2026 challenge, I wanted to treat you to an easy and impressive dessert! Some call it Lolly Cake, others call it Lolly Log. It's a classic New Zealand treat that most kids enjoyed at birthday parties. The recipe started in the 1940s and has been served in cafes and bakeries ever since. This recipe is extremely easy and uses just 5 ingredients you probably already have at home! It’s similar to our chocolate log, but uses marshmallows instead of chocolate! 🙃 You can also make it in a pan or roll it into balls!

Melt the butter in a microwave-safe bowl for about 1 minute and 15 seconds.

Meanwhile, crush the graham crackers in a food processor.

In a large bowl, combine the crushed graham crackers, mini marshmallows, sweetened condensed milk, and melted butter. Mix well until everything is evenly moistened.

Transfer the mixture to a clean countertop and shape it into a log, pressing firmly to hold its shape.

Spread the shredded coconut on a piece of plastic wrap, then roll the log over the coconut to coat all sides.

Wrap the log tightly in the plastic wrap and refrigerate for at least 1 hour.

Remove from the fridge and slice the log into pieces about 3/4 inch (2 cm) thick. Enjoy with tea, coffee, or hot chocolate! 😊
