Fresh ripe ingredients, no other dressings or flavorings needed. Made daily in small quantities, served and finished on the spot. In winter, I added a pinch of coriander and Cayenne pepper, because winter vegetables are usually bland.

Pulse tomato,shallot, cilantro, minced garlic in food processor, 8 seconds.

Mash avocado, lime juice, spices, with a potato masher.

Add one tablepoon of chopped mix at a time to the mashed avocado and taste. Mix and taste till perfect. Serve with fresh baked tortilla chips.

Plant pits in windowsill pots to grow plants or crush and steep in boiling water to make tea.
