When craving for crispy spicy yet soft easy go snacks, try making rice flour pooris.
Made simply by adding mashed boiled potatoes with few spices along with freshly prepared homemade chutney from coriander leaves. Can be enjoyed during evening snacks and perfect for breakfast as well.

Made simply by adding mashed boiled potatoes with few spices along with freshly prepared homemade chutney from coriander leaves. Can be enjoyed during evening snacks and perfect for breakfast as well.

Boil 1 to 2 cups of water to knead rice flour. When the water begins to boil, turn of the flame. Transfer it to a cup and keep aside. Assemble all the ingredients required for kneading.
Tip :1) Its easy to knead rice flour with hot water rather than using normal water.
2) It should not be too hot to burn hands nor allow it to cool down. - 2
Put rice flour in a big paranth along with mashed boiled potatoes. Add chopped onions and coriander leaves along with all the spices.

Mix well all the ingredients. Start kneading dough with hot water. Do not add water in one go. Knead it by adding little by little as required until it forms into binding consistency.
Tip: Half cup of water is sufficient to knead flour or add as required. - 4
Soft Rice Flour dough is ready to use. On the other side,heat oil in a kadhai. Start making pooris with a kneaded dough. Take small portion of dough and make pooris with the help of your hands by pressing it gently with your fingers. Do not allow to break by over pressing. Smoothen the cracks from the edges if required.
Tip: Do not allow the dough to rest for long as it will become sticky and wet. - 5
Prepare rest of the pooris and start putting in hot oil for deep frying. Add 2 to 3 pooris at a time. Fry on medium flame by flipping from both the sides for 3 to 4 minutes until they turn crispy and golden brown in color. Fry rest of the pooris.
Tip: The oil should not be too hot to allow the pooris to cook rapidly but uncooked from inside. - 6
Transfer it to a plate by draining oil with the help of siever spoon. Crispy yet soft Rice Flour pooris are ready. Further, take ingredients to make coriander chutney.

Put roughly Chopped Onions, tomatoes and green chilli in a blender jar to make a puree. Add chopped coriander leaves along with Black salt. Blend it for few seconds and chutney is ready.
Tip: Adding Lemon will make the chutney more delicious. - 8
Transfer chutney to serving bowl and enjoy with hot crispy rice flour pooris.
