Finely grind the cashews. Add all-purpose flour, powdered sugar, cornstarch, powdered milk, egg yolk, vanilla, and room-temperature butter. Mix until well combined. Roll the dough out to about 1/4 inch (5–8 mm) thick. For easier cutting, chill the dough in the freezer for about 10 minutes until firm.

Use a round cutter to cut the dough into crescent shapes (or any shape you like) and place them on a baking sheet lined with parchment paper. Preheat the oven to 300°F (150°C). Bake for 15 minutes on the middle rack.

While still warm, coat the cookies with powdered sugar.
