Ingredients

  1. 1 cupwashed and peeled carrots
  2. 1 cupwashed and peeled flat been(valor)
  3. 4 tablespoonsoil
  4. 1/4 tablespoonscumin seeds
  5. A pinchmustard seeds
  6. ajmo
  7. 1/4 tablespoons asafoetida
  8. 1/2 tablespoons turmeric powder
  9. 1.1/2 tablespoons coriander cumin powder
  10. 1 tablespoons kashmiri red chilli powder
  11. 1/2 tablespoons sugar
  12. 1/2 tablespoons lemon juice
  13. Chopped coriander leaves for garnish

    Wash and peel the carrots and flat beans.
    Boil the flat beans in water and set aside.

    When the oil in the pan is hot, add asafoetida, cumin seeds, mustard seeds, and ajmo, and let it sizzle well. Then add turmeric powder and carrots, mix well, and sauté for about a minute.

    Then, add coriander-cumin powder, salt, and red chili powder, and mix well. Add the boiled flat beans and mix well. Add a little water and mix again.

    When the water starts boiling and the spices mix well with the vegetables, add sugar and lemon juice, and mix well. Then, turn off the heat.

    Sprinkle coriander leaves, mix the vegetable dish well, and transfer it to a serving plate. Serve hot. This vegetable dish can be served with roti, bhakri, or with dal and rice.
