Ingredients

  • 2large red bell peppers
  • 1 1/4 cupstextured soy protein (about 150 grams)
  • 2 cupsvegetable broth (about 500 ml)
  • 2carrots
  • 1white onion
  • 3/4 cupSpanish-style vegetable stew (pisto) (about 200 grams)
  • 1/3 cupevaporated milk (about 100 ml)
  • 1/4 cupwhite wine
  • 2garlic cloves
  • 1/2 cupshredded cheese (about 50 grams)
  • 1 tablespoonground black pepper (about 20 grams)
  • 2 teaspoonsturmeric (about 10 grams)
  • 2 teaspoonsblack cumin (about 10 grams)
  • 1 teaspoonground nutmeg (about 5 grams)
  • 1 teaspoonsweet paprika (about 5 grams)

Steps

    Soak the textured soy protein in the hot vegetable broth.

    Sauté the garlic, and before it browns, add the onion.

    Add the carrots, white wine, and spices. Sauté until the alcohol evaporates.

    Add the textured soy protein with its soaking broth, the pisto, and the evaporated milk. Let everything cook uncovered over medium heat for about 20 minutes, allowing the liquid to reduce and the mixture to become creamy.

    Meanwhile, cut the red bell peppers in half and remove the seeds and white membranes.

    Once the filling is creamy, gently spoon it into the pepper halves. Top with shredded cheese and bake at 350°F (180°C), using both upper and lower heat, for 40 minutes.

    Serve. I like to pair this with a salad of tomatoes, pickles, and feta cheese. Enjoy!

Hace poco he descubierto la soja texturizada, nos hacemos mayores y tenemos que cuidarnos un poco más y con estos platos que poco a poco voy descubriendo, espero que mi cuerpo lo sepa agradecer.Me gusta cocinar, pero cocina sencilla y rápida, ensaladas variadas, legumbres, arroces y desde hace poco he descubierto la virtudes de cocinar con Soja texturizada, Jengibre, Cúrcuma, Comino negro.Tengo que comentar que nunca uso sal en mis platos y muy poca azúcar en mis postres, incluso en muchos sin nada de azúcar, por lo que cada uno deberá adecuarlo a sus gustos culinarios.
