I’ve always thought braised pork is full of Taiwanese flavor. But since I’m a bit lazy, I often look for easier, simpler ways to make it.

Cut the pork belly into chunks. Smash the garlic cloves.

Place the pork in a pot and sear until it releases its fat. Use the rendered pork fat to sauté the garlic.

Add the sugar and soy sauce, and cook until the sugar caramelizes and the sauce darkens.

Add the water and fried shallots.

Once the water comes to a boil, add 1 teaspoon of salt. (Taste and adjust the salt if needed. If you want to use the sauce over rice, you can make it a bit saltier.)

Simmer until the pork is tender. Done!
