A popular Turkish salad of two types of pasta mixed with vegetables. I used Farfalle and Conchiglie but you can use your own favourite

Ingredients

1 hour (ish!)
2 people
  1. 200 gramseach pasta
  2. 1medium carrot peeled and diced
  3. 1medium potato peeled and small diced (about 1 cm)
  4. 12mini plum tomatoes halved
  5. 1medium red onion peeled and diced
  6. 6spring onions cut into half inch pieces
  7. Lettuce of your choice for garnish
  8. 2 sprigsfresh dill roughly chopped
  9. 1small red chilli pepper sliced lengthways like matchsticks
  10. 1 handfulfrozen green beans
  11. 1 handfulfrozen garden peas
  12. 1small can sweetcorn
  13. Mayonnaise to bind

Cooking Instructions

1 hour (ish!)

    Cook the pasta in boiling salted water and then drain it off and cool in cold water.

    Cook the potatoes and carrots in boiling salted water until Al dente.

  3. 3

    Blanche the green beans and peas in salted water and refresh in cold water

  4. 4

    Drain everything that's in water off.

  5. 5

    Add everything to a suitable bowl (except the lettuce and dill) and mix together. Add salt and pepper to season as you mix.

    Add mayonnaise gradually mixing as you go until everything is coated with the mayonnaise

  7. 7

    Place on a serving dish and garnish with a couple of lettuce leaves and chopped fresh dill

  8. 8

    Serve and enjoy
