Ingredients

About 50 minutes
Serves 6–8 servings
  • 1orange
  • 1plain yogurt (about 5 oz or 125 grams)
  • 3/4 cupsugar (about 180 grams)
  • 3 1/2 tablespoonsoil (about 50 ml)
  • 1 packetbaking powder (about 2 1/2 teaspoons or 10-12 grams)
  • 1 1/2 cupsall-purpose flour (about 180 grams)
  • 2large eggs or 3 medium eggs

    This is super easy. Preheat the oven to 350°F (180°C), top and bottom heat if possible.

    Cut the orange into pieces. Using a blender or food processor, blend the whole orange (unpeeled) together with the yogurt, oil, and sugar until you have a paste with some small orange bits still visible.

    In a separate bowl, beat the eggs until very frothy, then add the orange mixture from the previous step.

    Add the baking powder and flour in two or three additions, preferably sifted to avoid lumps. The batter should have a typical cake consistency.

    Prepare your preferred cake pan. I use a springform pan, line the bottom with parchment paper, and grease the sides with butter. Bake for about 30–45 minutes, depending on your oven. Don't open the oven before 30 minutes or the cake may collapse—this tip works for all cake recipes. After that, check doneness by inserting a toothpick or thin knife in the center; if it comes out clean, it's done.
