This is one of the most consumed pakoray recipe in our house. My family absolutely loves it. It's super easy to make and tastes absolutely delicious

Add 5-6 tbsp of besan into a bowl and make a paste using 1.5 cups of water, salt, red chilli powder. Adjust the spices and water ratio according to your taste and consistency

Cut your potatoes thinly, similar to shoestrings and also finely shred onions. Add chopped coriander leaves to it and mix it well into the Besan paste you've made earlier

Let the mixture rest for 10 mins for best results. Meanwhile preheat oil in a pan

Use a spoon or your hand to make shapes out of the mixture into the hot oil. Let the pakoras fry on both sides for about 2 mins each until golden brown

Serve hot with mint yogurt chutney, imli chutney or even chilli garlic sauce/ketchup. And enjoy!
