A 100 years old Bengali traditional recipe for Doljatra today. It’s fried but I baked. The filling is veg but it can be non veg too. It’s both a sweet and savoury dish and I made a sweet one

In a bowl add Maida, baking soda, salt and sugar, mix, add oil and mix well, add water to knead to a tight dough, cover for 30 mins

For Filling - in a wok heat ghee, add khoya and cook to soften, add Chana, grated coconut, mix well
- 3
Add chopped almonds and raisins and mix well till it’s a soft dough consistency, set aside and cool

Roll out Luchi shape from the dough without mixing any extra Maida or oil. As it’s been tightly kneaded there is no need to use any extra Maida or oil, roll out two luchi’s

Put 2 Tbsp filling in the centre, add water on all sides, place another Luchi on it, press tightly.

With a knife carefully design triangle shape and set aside to complete the batches

Give melted butter brush, Pre heat oven at 180 deg C and bake for 10 mins, cool
- 8
Plate and enjoy
