Classic Mexican soup made with meatballs, onions, rice, and vegetables. A classic!
Cooking Instructions

In a large bowl mix your ground beef, rice, eggs, onion, cilantro, salt, black pepper, cumin powder, garlic powder, & oregano.

Roll the mixture into small
balls, the bigger the balls the longer it takes to cook. - 3
In your pot add about 2 tablespoons of oil (your choice) into your pot.

Blend your tomatoes, garlic, onion, chipotle peppers, water, salt, pepper, chicken bouillon & tomato bouillon together.

Pour your mixture to your pot and add 6 cups of water with 2 bay leaves

In the meantime while it boils cut your your vegetables. I used potatoes, zucchini, corn & carrots.

Once the water boils add the beef balls for 12 minutes on medium heat. Then add carrots, potatoes and corn for 20 more minutes.

After 32 minutes it’s done!
