Ingredients

  1. 2 poundsground beef
  2. halfcup rice
  3. 2eggs
  4. 1/4onion
  5. 1 bunchcilantro
  6. 1 tspsalt
  7. 1 tspgarlic powder
  8. 1/2cumin powder
  9. 1/2oregano
  10. 1/2black pepper
  11. Blender ingredients
  12. 1 cupwater
  13. 4tomatoes
  14. 2garlic cloves
  15. 1/4onion
  16. 2chipotle peppers
  17. 1 tablespoonchicken boulion
  18. 1 tablespoontomato boulion
  19. salt & pepper to taste
  20. veggies/optional
  21. 2whole carrots chopped
  22. 4corn
  23. 1zucchini chopped
  24. 2potatoes chopped
  25. 2bay leaves

Cooking Instructions

    In a large bowl mix your ground beef, rice, eggs, onion, cilantro, salt, black pepper, cumin powder, garlic powder, & oregano.

    Roll the mixture into small
    balls, the bigger the balls the longer it takes to cook.

    In your pot add about 2 tablespoons of oil (your choice) into your pot.

    Blend your tomatoes, garlic, onion, chipotle peppers, water, salt, pepper, chicken bouillon & tomato bouillon together.

    Pour your mixture to your pot and add 6 cups of water with 2 bay leaves

  6. 6

    In the meantime while it boils cut your your vegetables. I used potatoes, zucchini, corn & carrots.

    Once the water boils add the beef balls for 12 minutes on medium heat. Then add carrots, potatoes and corn for 20 more minutes.

    After 32 minutes it’s done!
