Ingredients

2-4 people
  • 1 cupdried maize (corn kernels) or 2 cups canned/frozen corn
  • 1 cupdried beans (red kidney beans or any preferred type) or 2 cups canned beans
  • 1medium onion, chopped
  • 2tomatoes, chopped
  • 2 tablespoonscooking oil
  • Salt to taste
  • Water
  • Optional: 1-2 potatoes, peeled and cubed; spices like curry powder or black pepper; fresh coriander for garnish

Steps

    Preparation (if using dried ingredients):
    Rinse the dried maize and beans thoroughly.

    Soak them in water overnight (or at least 6-8 hours) to soften. If using canned or pre-cooked maize and beans, skip this step.

    This step is optional. You can go directly to boiling the dried ingredients

  2. 2

    Cooking the Base:
    Drain the soaked maize and beans, then place them in a large pot.

    Add enough water to cover them (about 4-5 cups) and bring to a boil.

    Reduce heat, cover, and simmer for 1-2 hours until both maize and beans are tender. Add more water if needed during cooking. (For canned/frozen ingredients, simmer for about 20-30 minutes.)

    Sauteing:
    In a separate pan, heat the cooking oil over medium heat.

    Add the chopped onions and cook until soft and golden.

    Stir in the chopped tomatoes (and optional spices) and cook until they form a thick sauce, about 5-7 minutes.

    Combining:
    Drain excess water from the cooked maize and beans, then add them to the tomato mixture.

    If using potatoes, add them now and cook until they’re soft (about 15 minutes).

    Season with salt to taste and stir well.

    Serving:
    Simmer for another 5-10 minutes to let the flavors meld.

    Garnish with fresh coriander if desired, and serve hot as a standalone dish
