Here's a perfect recipe for a healthy breakfast. By swapping wheat flour for oat flour and milk for orange juice, you get a nutritious start to your day.

Preheat the oven to 350°F (180°C). Grease a baking pan or line it with parchment paper.

If using oat flakes, blend them until you get a fine flour. (Skip this step if using oat flour.) Sift until all the oats are finely ground.

Wash the oranges and grate all the zest. Squeeze the juice from the oranges and set aside.

In a bowl, mix the oat flour with the baking powder.

In another bowl, beat the eggs and mix with the sugar, olive oil, orange zest, and orange juice.

Combine the wet and dry mixtures together.

Bake at 350°F (180°C) for 45 minutes.

When you take it out of the oven, sprinkle a few more oat flakes on top before it cools. Remove from the pan once cooled.
