Pancakes 🥞!!

Sunday morning… What better plan than having delicious pancakes for breakfast?
They are super easy and quick to make!
In Spain, we call them “tortitas.”
I remember when I was little, going to a café in Murcia (Spain) to have them—they made them so good! I would order them with whipped cream and hot chocolate on top… Such a treat! 😋

First, in a bowl, whisk together the egg, milk, and sugar using a whisk until well combined.

Then gradually sift in the flour, salt, and baking powder, stirring continuously to avoid lumps.

Next, add the vanilla extract and mix well until you get a smooth batter, slightly thick but pourable.

Now heat a nonstick pan over medium heat and lightly grease it with butter. Pour small amounts of batter using a ladle or spoon to form pancakes.

Finally cook until bubbles form on the surface, then flip and cook for another minute until golden brown… And they are ready to eat!!! 🍽️

Eat them warm, freshly made! And if you have some leftover batter, you can store it in the fridge covered with plastic wrap for the next day—it keeps very well!

You can serve with fresh fruit, syrup, Nutella, dulce de leche, or your favorite toppings! Enjoy!
