Ingredients

Prep time -10 mins, Cooking time -20 mins
3-4 servings
  1. 2medium size Korola or Bitter gourd
  2. 1medium size potato
  3. 1medium size Begun or Eggplant
  4. 150 gmsChingri or Shrimps washed, deveined and head disposed off. Tail can remain
  5. 1/2 tsppanch Phoron
  6. 1medium size onion sliced
  7. 1/2 tspturmeric powder
  8. 1/8 tspsalt
  9. 1/2 cupwater
  10. 2 Tbspmustard oil plus 1 Tbsp mustard oil

Steps

Prep time -10 mins, Cooking time -20 mins
  1. 1

    Wash the Chingri, vegetables. Chingri should be deveined and head disposed off. Cut the Korola, deseed, cut the Begun, peel the potato and cut into small cubes

    Marinate the Chingri with turmeric powder and salt

    In a wok heat 1 Tbsp mustard oil and add the marinated fish. Fry for 2 mins and set aside

    In the same wok add rest of the mustard oil and add Panchphoron, stir 2 seconds and add sliced onions. Stir to soften, add the veggies and stir for 3 mins

    Add turmeric powder, salt and mix well. Add slit green chiliies and stir

    Add fried shrimps and mix well, add water and cover to cook

    Plate with rice and enjoy 😊
