Afghanistan / Pakistan Chapli Kabab (vegetarian version)

Let us Celebrate Eid with these lovely Chapli kabab. This is of course the vegetarian version of Chapli kabab. They are generally made with minced meat but here I have used par - boiled potatoes & used bread crumbs instead of maida . I have not deep - fried them but shallow fried them to a perfect golden color.
Tomato slice pressed on one side of the kabab , makes these delicious kabab different from other kabab ,which is its
'Pehchan.' , a unique identity in itself . They are very easy to make , so do try them .

Wash the potatoes in fresh water. Pressure cook them up to 2 whistles. Open the pressure cooker immediately & remove the potatoes. They will be raw from inside now & not fully cooked.Cool them a little.

Now grate these potatoes while they are slightly warm.

Add all the dry masalas, bread crumbs, chopped green chillies, dry red chilli flakes & salt.Mix very well.

Make big round & thick kabab. Pressure a slice of tomato on one side of the kabab.Repeat this process on all the kabab.

Heat oil in a pan. Place the 3 - 4 kabab on the pan, with tomato side facing downward. Cook 1 side for 5 -7 minutes till it turns golden brown.

Flip & cook the other side also for 5 -7 minutes. Remove.

Here is your soooooo good "Chapli"kabab ready. Sprinkle kabab masala & serve hot with tomato ketchup.
