What to do with so many carrots? Make this super simple and healthy soup and impress your friends and family!
The best part is you can adjust the ingredients ratio to your liking - add more onions, less garlic, more carrots - or add/subtract whichever ingredients you wish!

Preheat the oven to 220°C. In the meantime, toss your carrots, onions and garlic in some olive oil, salt and pepper in a baking pan.

Once cooked, transfer the vegetables to a pot and blend until smooth and consistent.

Add your stock of choice, water, and herbs and blend together with the roasted vegetables. Add more water/olive oil and salt to your liking.

Serve in a bowl and top with sliced apples, spring onion, cream and olive oil. Enjoy!
