A delicious and easy-to-make soup made with a mix of vegetables and split peas.

In a pot or pressure cooker, heat a little oil and a little butter. Add all the vegetables together after washing and cutting them into suitable pieces. Sauté over low heat. If you want to add meat, you can do so by browning the meat pieces in the oil first, then adding the vegetables.

Note: I prefer the soup without meat, cooked only with vegetables. You can serve another dish with meat on the side, depending on your family's preferences.

Wash the split peas well to remove dust and impurities, then add them to the pot with the vegetables. Add the spices: salt, ground cinnamon, ground cumin, ground ginger, sweet paprika, and a little tomato paste (you can skip the paste and just use the tomato and red pepper if you prefer).

Add hot water or chicken broth if you have it. Let the soup cook. Once it comes to a boil, close the pressure cooker and cook for 15 to 20 minutes. The soup is ready when done. Remove the bay leaf and cilantro bunch, then blend the soup.

Serve with a squeeze of lemon or a little olive oil. You can also serve it with soufflé or stuffed pastries. Enjoy!
