They’re so easy and affordable to make, and so delicious, that if it weren’t for moderation, I’d make them every day.

In a saucepan, combine the milk, water, and butter.

In a separate bowl, mix the cornstarch, flour, baking powder, and a pinch of salt.

When the mixture in the saucepan comes to a boil, remove it from the heat.

Add the flour mixture all at once and stir vigorously with a wooden spoon until it forms a ball.

Add the eggs one at a time, mixing well after each addition before adding the next.

Heat a skillet with plenty of vegetable oil over medium heat (if the oil is too hot, the fritters will burn on the outside and stay raw inside, and they won’t puff up).

Using a teaspoon, drop small balls of dough into the oil, turning them occasionally.

When they are puffed up and golden brown, transfer them to a plate lined with paper towels.

Place granulated sugar in a bowl and roll the fritters in the sugar to coat.
