Hearty Lentil & Vegetable Soup
A warming and wholesome soup, perfect for chilly days. Packed with lentils and fresh veg – ideal for a light lunch or simple supper.
Steps

Prep the veg: Finely chop 3 medium carrots (300g), 2 leeks (200g), and 3 celery sticks (150g).

Start the soup base: Add the chopped carrots, leeks and celery to 1 litre of boiling water in a saucepan. Stir in ½ a vegetable stock cube. Simmer for 10 minutes.

Add lentils: Rinse 200g of lentils, then add them to the pot. Cook for another 18–20 minutes, or until the lentils are tender.

Serve and enjoy: Ladle the hot soup into bowls and top with a handful of croutons for a bit of crunch.
