This weekend I had a lunch gathering and saw the perfect opportunity to make this tart in the shape of a rose—or at least that was the intention. 😂 The flavor turned out delicious, and it disappeared quickly. Here’s the step-by-step guide.

Place the pie crust between two sheets of parchment paper. Flatten it a bit with your hand, then use a rolling pin to roll it out.

Once ready, grease the tart pan with butter, flip the crust into the pan, and press it in with your hands to fit the shape. Use a fork to poke holes in the crust to let air escape.

Preheat the air fryer for about 3 minutes at 350°F (180°C). Place the tart crust in and bake for about 10 minutes. I like to check occasionally—if it puffs up, poke it a bit, and keep an eye on the browning.

Once done, let it cool.

Next, add the pastry cream. If it was in the fridge, stir it to make it smoother, like in the first photo.

Now wash the strawberries well. I first rinse them with cold water, then with water at 140°F (60°C), and finally with cold water again. Pat them dry gently.

Cut off the tip and the green part. Slice the strawberries thinly, and use a knife to arrange them on the tart.

Place the slices in circles from the outside in. For the inner layers, to use the tips and create a smaller 'petal' effect, slice the tips and place them in the center of the tart.

Soften the gelatin. Heat the water and sugar until the sugar dissolves, then add the gelatin and mix until combined. Use a pastry brush to glaze the strawberries for a shiny finish.
