Couscous with Fava Beans and Peas
A traditional Algerian recipe.

Moisten the couscous well with water. Add some vegetable oil and salt to taste, and let it absorb the water. Place the couscous in a steamer basket (couscoussier) and steam for the first time. Repeat the process: transfer the couscous to a large bowl, moisten it again, and add a little more oil to keep the grains from sticking together. Let it absorb the water, then steam it a second time. If the couscous is still not fully cooked, you can repeat the process a third time.

Meanwhile, wash the vegetables well—the fava beans and peas. Steam them in the couscoussier until they are fully cooked and tender.

Mix the couscous with the cooked vegetables, drizzle with olive oil, and serve hot. You can enjoy it with buttermilk or yogurt, according to your taste. Enjoy!
