My best ever healthy upma

Steps

Initially place a pan on one gas burner and add 3 cups of water. Let it allow to boil. Now chop veggies like ginger, spinach, green chilies, coriander etc.& keep them aside.

On the other pan, place kadhai, add 2tsp ghee. Add thick sooji & start roasting sooji. Roast until it has nice aroma. It takes about 10-15 minutes.

Once semolina/sooji is roasted, transfer it into a plate. In the same kadhai, add 3 tsp oil. Let us prepare tadka. Add mustard seeds. Let it crackle well. Then add jeera followed by mustard. Add asafoetida. Add ginger, green chilies. Curry leaves.

Transfer roasted sooji into the tadka. Roast sooji again for 5 -7 min. Add Salt and sugar as per taste. Water is boiled well now. Pour boiling water into sooji gradually. Add water carefully. Before adding water turn the flame off. Add all the water, stir it well. Now turn gas flame on again.

Stir &Cook semolina/sooji for 5-10 min. Cover it with lid to cook well. Take off lid. Add curd into cooked semolina /upma. Stir & mix curd into upma. Cook it well.Then add chopped spinach. Combine spinach with upma. Do not cook spinach more.

Then add chopped coriander. Combine &mix it well with upma. Take small amount of upma into bowl. Press it gently so that it acquires the shape of bowl. It looks nice..Garnish with grated coconut and fine sev. Ready to serve a healthy yet tasty upma!!
