Ingredients

30 min
2-3 servings
  • 1 lbwide rice noodles
  • 8 ozprotein (chicken, tofu, beef, pork etc.)
  • 1.5 cupchinese broccoli
  • 3 tbspoil
  • 2eggs
  • 3 cloveschopped garlic
  • Sauce
  • 1 tbspoyster sauce
  • 1 tbspFish sauce
  • 2 tbsplight soy sauce
  • 3 tbspdark soy sauce
  • 1/3 tspsalt
  • 2 tspsugar
  • 1/4 tspwhite pepper

    Prepare the sauce: Mix all sauce ingredients in a bowl.

    Prepare the noodles by carefully separating the noodles apart. Set aside.

  3. 3

    Cut up the Chinese broccoli into 1 inch pieces.

  4. 4

    Cook the protein of your choice in 1-2 teaspoon of light soy sauce and set aside.

  5. 5

    Turn your pan to medium high heat. Sauté chopped garlic until fragrant.

  6. 6

    Toss noodles into the pan and pour the sauce over the noodles. Stir fry until the sauce is well-incorporated with the noodles.

  7. 7

    Push aside the noodles to make room for eggs. Add in a little oil and crack in 2 eggs straight into the pan. Scramble until cooked, then stir it in with the noodles in the pan.

  8. 8

    Turn the heat up to high to let the noodles caramelize. This will help bring out the flavor of the sauce.

  9. 9

    Add the Chinese broccoli to the pan and stir-fry for 1 minute.

  10. 10

    Serve and enjoy! I like to top my Pad See Ew with chili flakes and a squeeze of lime or lemon.
