Chickpeas
Steps

First, slice the onions, then toss them with the flour and cornstarch. Place them in a strainer, then fry them in plenty of oil. Save the oil for later. Fry the onions until golden brown, then remove them.

Boil the chickpeas and lentils until tender.

Take some of the oil used for frying the onions and use it to fry the vermicelli noodles until golden. Add the rice and sauté, then pour in some of the lentil cooking water. Let it cook until the rice is done.

Boil the pasta, then after draining, toss it with 2 tablespoons of the onion oil.

To make the sauce, sauté the garlic and the remaining onions. Once they start to turn golden, add the tomato juice and let it simmer until thickened. Finally, add the vinegar and remove from heat.

For the dakka (garlic vinegar sauce), sauté the garlic in the onion oil, add 2 tablespoons ground coriander, cook just until fragrant, then add 1 cup vinegar and 1 cup water. Bring to a boil for a couple of minutes, then remove from heat.

Serve as you like, with toasted bread, pickles, and salad.
