This classic French soup, once regarded as a peasant dish, has grown to be a full-body, heart-warming recipe enjoyed by many worldwide.
Perfect for when it’s cold out, you have lots of onions, or both.
Steps

Sauté the onions in butter and oil over medium heat until caramelised. Salt the onions at this step to draw out the moisture.

Deglaze with white wine.

Once the wine has evaporated and the onions are jammy in consistency, add the flour and cook for about a minute.

Add the beef broth, thyme, and pepper to the onions, bring it to a boil, then lower the heat and simmer for 30 mins.

In the meantime, preheat the oven to 200°C and toast the baguette slices until golden and crispy.

Ladle the soup into oven-safe bowls, top with baguette slices and grated Gruyère cheese.

Broil until cheese is bubbly and golden, about 5-10 mins.

Garnish with a pinch of thyme and optionally, some extra baguette slices.
Tips
For extra flavor, add a splash of white wine to the onions while caramelizing.
