Ingredients

40-50 minutes
3-4 person
  • For prepared rice:
  • 2 cupbasmati rice
  • 1 tspghee
  • 1bay leaf
  • 2green cardamom
  • 1 inchcinnamon stick
  • 1star anise
  • 3cloves
  • 2 tspsalt or as per taste
  • 3+ 1/4 cup water
  • For making garam masala
  • 5Green cardamom
  • 2 inchcinnamon stick
  • 5cloves
  • 1/4 piecenutmeg
  • 1 piecemace
  • 1staranise
  • 1/2 tsppepper corns
  • 1 tspcaraway seeds
  • 1 tspfennel seeds
  • 2kashmiri red Chilli
  • For cook chicken:
  • 600 gmchicken
  • 4big Onion thinly sliced
  • 1 tbspgarlic crushed or coarsely grind
  • 1 tbspginger crushed or coarsely grind
  • 1.5 tspgreen chillies crushed
  • 3medium size tomato
  • 1/4 cupcurd
  • 1/2 tspturmeric powder
  • Handfulmint and coriander leaves
  • 2 tbspcoconut milk
  • 2 tbspfried onion
  • 1 tspsalt
  • 1/4 cupghee
  • For garnishing
  • 2 tbspcashew nuts
  • 1 tbspraisins
  • Few strain saffron soaked into 2 tbsp milk
  • leavesSome coriander and mint
  • Fried onion

Steps

40-50 minutes
  1. 1

    First take all whole spices mention above for making garam masala. Place into a pan and dry roast on low flame for 2-3 minutes or till they turn aromatic. Allow to cool them and make a fine powder of them.

    Peel the onion and cut into thin slices. Take a vessel add ghee and heat up. Add 3 nos onion slices and fry them till they turn golden brown.

    Remove from oil and keep aside.then fry cashew and raisins. Keep them aside.

    Add remaining one onion slices fry when they started light brown add crushed ginger and garlic saute 1 minute.

    Add crushed green Chilli saute few seconds then add chicken. Cooked on high flame for 5 minutes.keep stirring

    Add turmeric powder and salt. Mix them. Add ground masala and chopped tomatoes. Mix it cover and cook for ten minutes on medium flame

    Open the lid turn the flame low add whisk curd mix and cook on high flame for 2minutes. The oil has released.

    Add mint and coriander leaves,add coconut milk and fried onion. mix and cook for 2 minutes. Now the chicken has done. Keep aside.

    In another vessel add ghee and add whole spices,saute few seconds then add water and salt, cover the pot and let's the water boil. Then add soaked rice and Mix gently and cover it again.

    When the rice start boiling turn the flame medium and cook the rice on medium to low flame till the rice has done. Keep I aside. Soaked the saffron into lukewarm milk for 5 minutes.

    Take a heavy deep bottom vessel. First layer with the cooked chicken curry and spread evenly. Add second layer with half quantity of cooked rice.spread it evenly on the curry. Add some mint and coriander leaves, some fried onion.sprinkle little amount of garam masala.

    Add 1 tbsp saffron milk then repeat the same process. Make a second layer of rice,add mint and coriander leaves, add remaining fried onion. Add fried cashew and rasins on top. Sprinkle garam masala and add saffron milk.

    Now cover the vessel with aluminum foil, and cover with lid. Place the pot on heated tawa and cooked the biryani on low flame for 20 minutes. Then switch off the flame. Leave it for 5 minutes. Then open the lid. The biryani is ready.

    Mix gently. Dish out and served it with raita.
