Cook your liempo ahead of time (see my recipe for lechon kawali)

Add oil to your pan. Sauté garlic and onion. Add annatto powder then the peanut butter. Mix thoroughly. Add the water and mix.

Add brown sugar, pepper, and crushed peanuts and glutinous rice. Season with fish sauce. Sauce is ready. Set it aside.

Add oil to a pan and fry each veggies one kind at a time. Take it out and set aside. Combine everything together on a serving plate by adding the sauce first, then line up the veggies on top, followed by the pork belly. Share and enjoy.
