Braised King Mackerel W/ Pineapple | Cá Thu Kho Khóm

Vietnamese braised fishes are the most flavorful and delicious fish recipes you’ll ever find. The famous “cá kho tộ” - Braised Catfish in clay pot is one iconic dish that every Vietnamese and foreigners loves!
The next most popular way to braised fish is pineapple braised. Mostly this method or recipe is for mackerels, Tuna, and other saltwater fishes. I used king mackerel in this recipe, but you can also use, Spanish mackerel, Ahi Tuna, Albacore, Yellowtail, ect. Great when paired with green mustard leaf soup.

Prepare your King mackerel - wash and remove all bloodlines. Soak fish in salt, white vinegar, smashed garlic, and water for 5 minutes. Rinse with water and let strain dry.

Pat dry your fish and marinade with all ingredients listed in the “fish marinade” section. Let marinade 10 minutes.

Prepare the “kho sauce” by combining all ingredients listed on the “kho Sauce” section. Whisk well to combine.

In a wide pan with a good amount of cooking oil, seared both side of your fish steaks on medium heat. Do not cook through (70% cooked). Remove and set aside.

Using the same pan- add minced garlic and shallots. Bring out aroma before adding in pineapple chunks, sugar, and black pepper. Sauté for 2-3 minutes, Before adding our mixed kho sauce AND left over marinade from fish.

Simmer on medium low for 2-3 minutes before adding back in the fish & red chili.

Simmer on medium to low heat for about 25-30 minutes or until sauce is reduced to half. Then top with chopped green onions.

Enjoy with rice or vermicelli noodles!
