In a bowl, combine the whole wheat flour, clarified butter, oil, and salt.

Mix everything together with your hands until the flour has a crumbly texture.

Add the water and knead the dough for a few minutes.

Shape the dough into a ball, cover with a kitchen towel, and let it rest for at least 15 minutes. The dough will become smoother.

For a large flatbread, roll out the dough ball with a rolling pin. For two medium flatbreads, divide the dough into two equal balls. For one large and one small flatbread, divide the dough into one large ball and one small ball.

Place the flatbread on a preheated cast iron griddle or nonstick skillet and cook on both sides over medium heat.

Cook the second flatbread on both sides as well.
