My daughters were first introduced to this 'Fried Milk' when we visited Malaysia last year December 2024. Their uncles took them to a beautiful small town, SENIAWAN, BAU (SARAWAK, BORNEO). Mix milk, cornstarch, and sugar until well combined in a saucepan. The sugar should dissolve and cornstarch should not have lumps.

Place saucepan on a stove. Simmer over medium heat and keep stirring for 4 - 6 minutes or UNTIL the milk thickens. Always keep the heat on medium to avoid burning the milk, so don't rush it.

When the mixture has thickened, remove the pan from the heat. Keep aside. Prepare your container or any flat dishes. We used a square glass bowl. Grease it with cooking oil.

Next, transfer your cooked milk mixture to this greased container. Level it and place a cling film on top. Leave it in the fridge for about an hour OR UNTIL the mixture is set or firm enough to hold its shape. The setting time varies. Some even leave it in the fridge overnight, thus making this PERFECT for anyone who wants to serve this in gatherings or parties. It can be prepared early. Next, turn it out onto a cutting board. Cut into your preferred shapes like logs, squares or rectangular.

✅️NOTE : Alternatively, you can also line any container of your choice with parchment paper, leaving two sides longer than the height of the container or tray (to make it easier to lift & transfer out later). Put in the thicken milk solid and place another piece of parchment paper on top, covering every inch of its surface.

Next, bread each log or square by coating it with cornstarch first, then into the beaten egg, and lastly with panko.

✅️NOTE : If you don't have an air fryer, you can deep fry them over medium heat until they are light golden brown then leave on a wire rack to remove any excess oil (if any). If you have the time, you can coat all the pieces then keep them in the fridge again for 5-10 minutes while you preparing for deep frying or your oil heating up. We don't usually wait. We coat and deep fry them straight (provided that it's well-set and firm).

Arrange coated pieces in an air fryer basket and spray them with oil. Air fry at 400°F for about 8 to 10 minutes, or until they are golden and crispy on the outside. Mid way through air frying, flip them and spray them again with oil.

Once done, remove them from the air fryer and allow them to cool slightly. You can serve them warm and enjoy this fried milk with condensed milk or custard sauce. See ✅️C. SERVING SUGGESTIONS
