  1. 6boiled eggs (sliced or chopped)
  2. 3 cupcooked shredded chicken (roast, grilled, or boiled)
  3. 12 slicessandwich bread (white or whole wheat)
  4. 9 tbspmayonnaise
  5. 3 tspDijon or yellow mustard (optional)
  6. Salt & black pepper to taste
  7. leavesLettuce
  8. Tomato slices (optional)

Cooking Instructions

    Boil chicken (10–12 min), shred it. Hard-boil eggs (8–10 min), peel and slice or mash.

    In a bowl, mix chicken, egg, mayo, mustard, salt, and pepper. Stir until well combined and creamy.

    Place lettuce on a bread slice. Add a generous scoop of the egg-chicken filling. Top with tomato slices (optional), and the second slice of bread. Serve as-is or toast on a pan or sandwich press until golden.
