Combine the rice and pumpkin in a pot and simmer until the congee is soft and creamy to your liking.

Cut the lion's mane mushrooms into small pieces and sauté briefly until slightly firm. If you prefer a softer texture, you can add the mushrooms directly to the congee after it has softened.

Add the mushrooms to the congee and cook together for about 5 to 7 minutes. Season with vegetarian fish sauce, salt, and bouillon powder to taste. When serving, ladle the congee into bowls and sprinkle with perilla or cilantro.
