Ingredients

  • 2parts white rice
  • 1part glutinous rice (optional; you can use all white rice, but glutinous rice makes the congee creamier and richer)
  • 1small amount of pumpkin for natural sweetness
  • Prepared lion's mane mushrooms
  • Vegetarian fish sauce, bouillon powder, salt
  • Herbs for garnish (perilla or cilantro)

Steps

    Combine the rice and pumpkin in a pot and simmer until the congee is soft and creamy to your liking.

  2. 2

    Cut the lion's mane mushrooms into small pieces and sauté briefly until slightly firm. If you prefer a softer texture, you can add the mushrooms directly to the congee after it has softened.

  3. 3

    Add the mushrooms to the congee and cook together for about 5 to 7 minutes. Season with vegetarian fish sauce, salt, and bouillon powder to taste. When serving, ladle the congee into bowls and sprinkle with perilla or cilantro.
