Avocado Sandwich, a healthy lunch box sandwich great for little kids as a finger food for toddlers or snack or even as a main course. One easy way to send a healthy sandwich for your little one- creamy avocados with fresh veggies and peanut butter… um um yum!
Also one of my favorite ways to eat avocados is one of the simplest- spread it on a toast with mayo and greens.

Steps

Peel and mash the Avocado. Finely chop the veggies. Keep other ingredients ready.

Add all the veggies in a mashed avocado, add the spices and lemon juice. Mix gently.

Cut the edges of the bread. Spread the peanut butter on a bread slice. Spread the avocado mixture evenly on the bread and cover with another bread.

Toast the bread in the toaster till crunchy. Remove the sandwich and cut in a cross. Yummy Avocado Sandwich is ready for kids. Arrange in a lunchbox.

I also served Cashew Jaggery homemade cookies with sandwiches so kids can develop different tastes and enjoy their snacks.
