I was craving fried boquerones but wanted to avoid frying.
Steps

Preheat the oven to 350°F (180°C).

Clean the anchovies by removing the heads and guts.

Set up three bowls: one with flour, one with the beaten egg, and one with breadcrumbs.

Dredge the anchovies first in flour, then dip in the egg, and finally coat with breadcrumbs.

Arrange the anchovies on a baking sheet.

Drizzle with olive oil and sprinkle with salt to taste.

Bake for 10 minutes, then serve.
