Steps

Prepare the base: in a pan, heat oil and add cumin seeds, saute garlic and onion till golden. Add carrot, spices (coriander powder, cumin powder, paprika powder) and chicken cube/ veg cube and salt mix well, add rice mix well with spices, add water. Cook until tender and flavourful. Set aside.

Lentil & salad layer: in a pan heat oil, add cumin seeds, saute garlic, green chilies and onion till golden, add tomato, salt cook for 1 min, add spices (garam masala, coriander cumin powder, kashmiri chili powder/ paprika powder, turmeric) mix well, add soaked red lentil and add water until tender. Set aside. For salad layer: mix red cabbage and beetroot in a bowl for a crunchy, add black pepper powder, salt, olive oil and lemon juice mix well and set aside.

Stack & Garnish: lightly grease a small bowl, layer rice, lentils and salad to your liking. Invert gently onto a serving plate. Garnish with fried onions, Tulsi leaves (indian holy basil leaves) and lemon wedge. Optional: add green chilies for a bold touch.
