Blanch washed spinach in boiling salted water for 8–10 seconds, chill in ice water, squeeze dry to 35g, then blend with 30ml water and ¼ tsp lemon juice until smooth (yields about 60ml)

Mix flour, salt, yeast, sugar, and spinach purée. Knead into a smooth green dough ball.

Roll the green dough ball and the white dough ball into long logs, then divide each log into 16 equal pieces

Divide each white dough piece into three small parts (about 5g each) and roll them into round balls—you’ll get 48 balls total.

Roll each green dough piece into a round ball, about 15g each.

Roll each green ball into a disc about 3 inches (7.5 cm) in diameter using a rolling pin.

Make a cut right down the middle of the green disc, but don’t cut all the way through the sides.

Take three white dough balls, smooth side down, line them up in a row, and place them on the green disc.

Pinch the edges tightly to seal, then use a small knife to shape and tidy up the bun.

After shaping all the buns, place them in the steamer and let them rise until about 1.5 times bigger.

Once the water’s boiling and steaming, cook the buns for 8 minutes. Then turn off the heat and wait 3 minutes before opening the lid.
