Easy Cherry Jello Cake

This very sweet, decadent chilled cake is from my mother's recipe. It's quick and easy to make, perfect for summer dessert and popular with children. Fair warning, it disappears quickly!

Ingredients

  1. 1 boxwhite cake mix
  2. 3whole eggs or 4 egg whites
  3. 1/2 cupvegetable oil
  4. 1/2 cupwater
  5. 1 boxcherry Jello
  6. 2 canscherry pie filling
  7. 1 containerwhipped topping

Cooking Instructions

    Empty white cake mix into a large mixing bowl. Add eggs, oil and water according to box instructions and beat until smooth.

    Pour batter into a lightly greased cake pan and bake according to instructions, @30 minutes at 350 degrees.

    Let the finished cake cool until just warm to the touch.

    Empty 1 box of cherry jello into a bowl. Add 1 cup of boiling water and stir thoroughly until the powder is dissolved.

    Using a wooden spoon, poke 8-10 symmetrical holes through the cake. Pour the jello mixture over the top of the cake, being sure to add some to each hole.

    Pour both cans of cherry filling over the top of the cake to make an even layer. Add a container of whipped topping to finish.

    Refrigerate immediately and serve chilled.
