Ingredients

Serves 2-3 servings
  • 7 ozcooked pork loin, shredded (about 200 grams)
  • 1baby lettuce or romaine heart
  • 1plum tomato
  • 3-4radishes, depending on size
  • 2large slices red onion
  • 2 tablespoonsolive oil, divided
  • 1 tablespoonred wine vinegar
  • 1/2 teaspoondried oregano
  • Salt and pepper, to taste

    Prepare the ingredients. Heat 1 tablespoon of olive oil in a pan and sauté the onion until it turns translucent but not browned. Set aside in a bowl or plate to cool. Wash and disinfect the lettuce, tomato, and radishes. Preferably use small radishes.

    Once the onion is cool, add the remaining tablespoon of olive oil, the vinegar, oregano, salt, and pepper. Mix well. Slice the radishes as thinly as possible.

    Dice the tomato into small cubes and add to the pork along with the radishes. Mix, then add the onion with all the dressing. Mix well.

    When ready to serve, finely slice the lettuce and add it to the pork mixture so it doesn’t wilt. Mix well, adjust seasoning, and enjoy. You can serve it with avocado and eat it on tostadas or with tortillas.
