If the dough is a bit stiff, add the water and olive oil, then knead until smooth.

Use a pasta machine if you have one.

Shape the dough into ribbon-style noodles.

Sprinkle semolina on the work surface and let the noodles dry for 15 minutes.

Cook the noodles in a large pot of salted boiling water until tender but firm.
