On days when we had leftover boiled eggs, she’d whip up a quick, spicy masala and transform the eggs into something bold, comforting, and delicious. It was never just about the food it was about love, resourcefulness, and flavor packed into every bite 🫶.

One of our favorite ways to eat it was with a hot, rustic jowar or bajra bhakri. And the combination was always a hit at the table no matter how simple the day🌞.

Ingredients

  • For the Eggs:
  • Boiled Eggs
  • For the Masala Stuffing
  • 2 tbspoil
  • 1onion in large slice
  • 1/2 tspadrak-lahsun paste (ginger-garlic paste)
  • 1small tomato, finely chopped
  • 1/4 tsphaldi
  • 1/2 tsplal mirch
  • 1/2 tspgaram masala
  • 1/2 tspegg curry masala
  • Salt to taste
  • Hara dhaniya (fresh coriander), chopped
  • Halfgrated dry coconut

    Roast the Coconut:
    Take half a grated coconut and dry roast it in a pan over medium heat until it turns golden brown and releases a nutty aroma. Once done, transfer it to a plate and set aside.

    Sauté the Onion:
    In the same pan, add a small amount of oil and roast chopped onions until they turn golden brown. Remove them from the pan and set aside.

    Roast Tomato and Coriander leaves:
    Roast one chopped tomato and some coriander leaves in the pan. Once they soften and release their aroma, remove them from the heat.

    Prepare the Masala Paste:
    Combine all the roasted ingredients in a blender along with ½ teaspoon of ginger-garlic paste. Grind everything into a smooth paste using a little water as needed.

    Combine the Masala:
    Add ¼ teaspoon turmeric powder, ½ teaspoon red chili powder, ½ teaspoon garam masala, ½ teaspoon egg masala, chopped coriander leaves, and salt to taste. Mix well.

    Prepare the Eggs:
    Take boiled eggs, peel them, and cut them into halves lengthwise.

  7. 7

    Stuff the Eggs:
    Spoon the prepared masala over the cut side of each egg half, generously coating the yolk.

    Pan-Fry the Stuffed Eggs:
    Heat a little oil in a pan on low flame. Place the stuffed eggs masala-side down and cook gently. Flip and cook the other side as well, being careful not to break the eggs. You can add any leftover masala to the pan for extra flavor. Cook for about 5 minutes until everything is nicely roasted.

    Garnish and Serve:
    Garnish with freshly chopped coriander leaves. Serve hot with bhakri or chapati.
