Wash and peel the mangoes. Cut into small, uniform pieces.

In a large bowl, mix mango pieces with salt and turmeric.

Add sugar, mix well, cover, and let sit for 2 hours.

Strain the mixture, collecting the liquid in a pan.

Cook the syrup on medium heat until it reaches a 1-thread consistency (about 40 minutes).

Once cooled, add mango pieces and chili powder to the syrup. Mix and leave overnight.

The next day, add roasted cumin and asafoetida. Mix well and transfer to a sterilized jar.
Tips
