Cardamom Date Cookies
This has become my all time favorite cookie, I’m actually obsessed
Cooking Instructions

In a bowl, combine softened butter, brown sugar, and granulated sugar
- 2
Once mixed, add in eggs and vanilla and mix together
- 3
In another bowl, mix together flour, baking soda, and ground cardamom
- 4
Fold flour mixture into butter mixture
- 5
Once flour mixture is 75% folded in, add in chopped dates and mix together (make sure not to over mix)
- 6
Bake on 350F for 11-13 minutes
- 7
Let rest for at least 5 minutes then serve

Doing a little preholiday baking today. I never even had these BEFORE I lost my cake privileges lol this is the ole 3 ingredient peanut butter cookies but I doubled it and used cashew butter instead. I also balanced out the sweet with some salt and put a copious amount of vanilla in as well. I like big food so I use a bigger scoop than my cookie scoop. I tried to imitate the delicious cookies I found in a famous bakery with naturally-leavened bread. They should taste quite similar.If you don't have any dates or cranberries, you can use raisins. The cookies in the photos are quite large, they should actually be a little thinner. If they're too fat they'll take longer to bake and become too big to call 'bite-sized'.
