Snake gourd stew

Wash the snake gourd and open it up to remove the seeds which is encased in red flesh. Separate the flesh from the seeds.

Ad the onions, garlic and pepper. Grind to your desired texture (smooth or rough).

Make your stew as you would your normal tomato stew by frying it in oil, adding your stock water. If you don't have stock water, add plain water. Add curry powder, seasoning cubes and any spices of your choice. Leave to cook to allow the flavors blend together and serve with rice, yam, etc.
